Before Kick Off, You Can Cook Off

How will you be watching the game this year? No matter where you are, it’s likely that you’ll be surrounded by friends, fans and food! Every year before kickoff, our TowneBank Mortgage team gets together for the Annual Chili Cookoff. The competition gets pretty heated, and not just because the chili is spicy, and we’ve got talented chefs creating recipes too good not to share.

Whether you enjoy it with cornbread, rice, noodles, or even serve it on your nachos, here are a couple of our award-winning recipes you can try at home.

White Bean and Turkey Chili

  • 2 cups diced yellow onion
  • 1 1/2 tbsp. chili powder
  • 1 tbsp. minced garlic
  • 1 1/2 tsp. ground cumin
  • 1 tsp. dried oregano
  • 3 cans Great Northern beans
  • 4 cups fat-free chicken broth
  • 3 cups chopped cooked turkey
  • 1/2 cup diced seeded plum tomato (about 1)
  • 1/3 cup chopped fresh cilantro
  • 2 tbsp. fresh lime juice
  • 1/2 tsp. salt and pepper
  • 8 lime wedges (optional)

Instructions: Heat oil in a large dutch oven over medium-high heat. Add onion; sauté 10 minutes or until tender and golden. Add chili powder, garlic, and cumin; sauté for 2 minutes. Add oregano and beans; cook for 30 seconds. Add broth; bring to a simmer. Cook 20 minutes. Place 2 cups of bean mixture in a blender or food processor, and process until smooth. Return puréed mixture to pan. Add turkey, and cook 5 minutes or until thoroughly heated. Remove from heat. Add diced tomato, chopped cilantro, lime juice, salt and pepper, stirring well. Garnish with lime wedges, if desired.

  • 4 boneless, skinless chicken breasts
  • 1 diced orange pepper
  • 1 diced yellow pepper
  • 2 diced green peppers
  • 1 diced red pepper
  • 1 yellow onion
  • 1 carton chicken broth
  • 7 healthy shakes of chili powder
  • 12 healthy shakes of black pepper
  • 8 tbsp. diced jalapeños
  • 3 cans northern beans
  • 2 cans light kidney beans

Instructions: Bake chicken at 350° for 30 minutes. Drain beans and add to crockpot. Next, add spices and peppers. Lastly, add chicken and chicken broth. Cook on high for 3+ hours, or overnight to make those veggies nice and flavorful.
